Suet: the densest food you can hang, and the rules that come with it
A single cake carries more energy than a pound of sunflower, which is why suet is the winter food and why heat is the thing that ruins it.
The short answer
- Suet is about 75% fat and 740 kcal per 100 g, the highest energy density of any feeder food. A single standard cake carries more energy than a pound of black oil sunflower.
- Plain rendered suet comes down when daytime highs pass about 70 °F. Above that it softens, smears onto head feathers and starts to oxidise.
- No-melt cakes hold their shape into the 90s F because flour and cornmeal bind them. Holding shape is not the same as staying fresh, and the claim does not cover rancidity.
- Rancid and moldy are different failures with different responses. Rancid means bin the cake. Moldy means bin the cake and disinfect the cage and the ground under it.
- Ten species rate suet a top-tier food in our dataset, including every woodpecker we track, both nuthatches, the chickadee, the titmouse and the Carolina Wren.
Suet started as the hard fat from around the kidneys of cattle. What you buy now is that fat rendered, which means melted, strained and re-set, usually blended with seed, grain, peanut or dried insects and pressed into a cake sized to a wire cage. Rendering matters: raw fat from a butcher goes off in days at feeder temperatures, while rendered fat has had the water and connective tissue removed and is stable for weeks in the cold.
It is the densest food you can put outside. In our dataset a suet cake runs about 740 kcal per 100 g against 584 for sunflower kernel and 365 for cracked corn, and it is about 75% fat.
The energy case, in numbers#
A standard cake, the roughly 11 oz square that fits a 5 in wire cage, holds about 2,300 kcal. A full pound of black oil sunflower as bought, once you write off the quarter of it that is hull, delivers about 1,990 kcal. So one small cake still beats a pound of sunflower on energy, at about 1,526 kcal per dollar against 1,472 for the sunflower. On price per calorie the two are close. What separates them is that suet is three quarters fat, needs no opening, and leaves nothing on the ground.
That is the whole argument for suet in cold weather. A small bird on a January night is running a deficit it has to close during a short day, and fat is the most compact way to close it. The comparison across every food is laid out in cost per calorie.
Plain, and the four blends worth knowing#

If you are buying one, buy peanut. If you are buying two, buy peanut and insect, because the insect cake is the only one that reliably adds species rather than volume, particularly Carolina Wrens and bluebirds, which are otherwise hard to pull in without running live food.
A note on cheap cakes: read the ingredient order. If grain and seed come before fat, you are buying a seed block with fat as a binder, and the energy density drops toward that of ordinary seed while the price does not. The point of suet is the fat fraction.
On hot pepper specifically: birds do not react to capsaicin the way mammals do, so pepper blends are not cruel to the birds. They do reduce squirrel interest, they do not eliminate it, and the dust is an eye and skin irritant for whoever unwraps the cake. Use gloves. Treat it as a supplement to correct pole geometry, never a substitute, which is the argument in squirrels.
What no-melt actually promises#
No-melt cakes are rendered fat bound with flour, cornmeal or similar starches. The binder raises the temperature at which the cake loses structure, so the block keeps its shape at temperatures where plain suet would slump out of the cage and drop onto the grass.
That is the entire claim, and it is worth being precise about it.
There is a second limitation. The reason to take suet down in heat is not only the cake, it is the bird. Clinging birds press their heads and faces into the cage while feeding. Fat that is soft enough to transfer will matt the feathers around the face, and matted feathers insulate poorly and are hard to preen clean. A no-melt cake at 95 °F is still soft to the touch even if it is still square.
Temperature: two thresholds and a takedown rule#
The rule we use, based on daytime high rather than overnight low, because the daytime high is when the cake sits in the sun:

Practical consequences by region. In the northern tier and most of Canada, suet is a nine-month or year-round food. In the mid-Atlantic and Midwest it runs roughly October to April on plain cakes. In the Deep South, the Gulf coast and the desert Southwest it is a genuinely short winter season, and attempting to feed suet through July is how most people learn what rancid fat smells like. One more takedown trigger that has nothing to do with temperature: in bear country, suet comes in at the first sign of activity in spring and does not go back out until the bears are denned. Fat is the single most attractive thing in a yard to a bear. See bears.
Rancid and moldy are different problems#
People use the two words interchangeably and then apply the wrong fix.
Rancid is the fat oxidising. Signs: a smell like stale cooking oil, old crayons or paint; a waxy sheen developing on the surface; color drifting from cream toward gray-yellow; and birds ignoring a cake that was busy last week. Rancid suet is unpalatable rather than acutely dangerous. The response is to bin the cake, wipe out the cage, and buy smaller cakes or store the spares in the freezer.
Mold is fungal growth, usually starting on the seed, fruit or insect inclusions rather than on the fat itself, and often on the cage bars and the damp ground beneath before it appears on the cake. Signs: fuzzy white, green or black patches, a musty cellar smell, and a slimy feel on the wire. The response is more serious. Remove and bag the cake, wash the cage in hot soapy water, disinfect it, rinse and dry it completely, and rake up and remove the fallen crumbs underneath, because that debris is where the problem persists. A useful quick check: an untouched cake at a feeder that is normally busy is telling you something before your nose does. Go and smell it.
Feeder, placement and the two nuisance problems#
A basic vinyl-coated wire cage is all suet needs, and the coating matters in freezing weather because bare metal can hold a wet tongue or foot. Two variations solve specific problems:
- A tail-prop cage, with a panel extending below the cake, gives larger woodpeckers something to brace against. Worth it if you have Northern Flickers or hairy woodpeckers.
- An upside-down cage, feeding only from below, excludes starlings almost completely while chickadees, nuthatches and downy woodpeckers feed hanging upside down without difficulty. This is the standard answer to a starling takeover and it works better than any repellent. More in starlings and suet feeders.
Hang the cage against a tree trunk or on a pole arm, not swinging in open air, and put it where clinging birds have a bolt route to cover within a few feet. Ten species rate suet a top-tier food, which ties it with shelled peanuts and puts it behind only sunflower hearts. The list is the bark guild almost exactly: every woodpecker we track, both nuthatches, the chickadee, the titmouse and the Carolina Wren, plus the European Starling, which is the reason the upside-down cage exists.
Note who is missing. Finches, goldfinches, siskins and sparrows barely register on suet, and Downy Woodpeckers and their relatives barely register on millet. That lack of overlap is exactly why a suet cage next to a seed feeder adds species rather than duplicating the ones you already have, and it is the cheapest way to do it. When should I put suet out and when should I take it down?
Put plain suet out in autumn once daytime highs are consistently below about 70 °F, and take it down in spring when they pass that mark again. No-melt dough cakes stretch that to roughly 90 °F. Above those thresholds the fat softens, drips, and can smear onto the head and face feathers of clinging birds, which matters because matted feathers insulate badly. In the Deep South and the desert Southwest that means suet is a genuinely seasonal food, and in much of Canada it can stay out most of the year.
What does no-melt suet actually mean?
It means the cake has been bound with flour, cornmeal or similar so it holds its shape at temperatures where plain rendered fat would slump. It does not mean the fat cannot go rancid, and it does not mean the cake is safe indefinitely in heat. Oxidation is chemistry, not structure, and it runs faster the warmer it gets. A no-melt cake in an August yard will keep its square edges and still turn. Judge it by smell, not by whether it is holding together.
Is suet gone bad if it smells like old paint?
That is rancidity. Oxidised fat smells like stale oil, old crayons or paint, the surface takes on a waxy sheen and the color drifts from cream toward gray-yellow. Birds usually stop feeding before you notice the smell, so an untouched cake at a normally busy feeder is worth sniffing. Rancid suet is a waste rather than an emergency: bin the cake, wipe the cage, carry on. Mold is the more serious failure and looks completely different.
Which suet blend should I buy?
Start with peanut. It has the broadest appeal across woodpeckers, nuthatches, chickadees and titmice, and it is rarely refused. Insect blends are the one to add if you want Carolina Wrens or bluebirds. Fruit and berry blends are the least reliable: many yards take them slowly and they draw starlings as readily as anything else. Plain rendered suet with nothing in it works perfectly well and is the cheapest option, but it does not pull new species in the way peanut does.
Does hot pepper suet stop squirrels?
It reduces squirrel interest, because birds do not respond to capsaicin the way mammals do. It is not a solution on its own. Squirrels that are hungry enough will still work at it, and pepper dust is an irritant to handle, so wear gloves and keep it away from your eyes and face when you unwrap a cake. Treat pepper blends as a supplement to a properly placed baffle, never as a replacement for one.
Can I feed suet in summer?
In cool northern summers, yes, using a no-melt formulation and a shaded position. In hot regions, no. Two problems compound above about 90 °F: the fat oxidises quickly enough to turn a cake in a few days, and soft fat transfers onto the plumage of birds that press against the cage. Feed mealworms, sunflower hearts or fruit in high summer instead and bring suet back in autumn.
